Creamy cashew sauce

Bring 5 dl (2 cups) of water to a boil, turn off the heat and pour in 2.5 dl (1 cup) of raw, unsalted cashews. Let sit for 20-30 minutes, drain, and place in a blender with 1 dl cold water, the juice from 1 lemon, I diced garlic  clove, 1.5 tablespoons of soy sauce and a tiny drizzle of honey. Pulse until you get a smooth sauce. Seen here mixed with left-over rĂ´tisserie chicken for a dairy-free chicken salad
