Roast chicken thighs


 Prep the chicken at least a day in advance. Make a paste with lemon zest, lemon juice, fresh thyme, and grated garlic. Dry the chicken skin, season with salt & pepper and then rub it with the mixture and refrigerate (uncovered) for up to two days.

Heat the oven to 190 C /375 F, shave butter over the chicken and roast for ~ an hour until the inside temperature is right.
