Oven fries
We had a frie-off last night, comparing fries made in the oven vs. fried in oil on the stove top. I think the oven won. Either way, peel, slice and soak strips of Bintje potatoes in a bowl of hot water. Pad dry with a towel. Drying is important.
For the oven, mix the fries with salt, pepper, olive oil and other spices to your liking (a Swedish dill mixture in this case), toss and spread in a single layer on a baking sheet. Cook at 400 F/ 200 C for app. 20 minutes, turn over (using a hard flat spatula) then another 20 minutes, depending on thickness. If you prefer regular frying, pad dry, put it hot vegetable oil (180 C), dry off on a paper towel and then season.
