Lentils

Green lentils ("Lentilles vertes du Puy" not to be confused with the often mushy brown variety) are a favorite that I often resort to when I have nothing planned. Typical last-minute improv' recipe may be a salad of cooked (al dente) lentils, red onions and tuna in a grain mustard vinaigrette.
