Herring and beet salad
A traditional Swedish Christmas dish that also works for an Eastern European vodka evening... Cut into small dice: herring filets, 1 red onion, 1 tart apple, 2-3 pickled gherkins, 2 cooked potatoes, 5-6 crushed cloves (very little, it's quite strong!). Then add boiled beet in equal proportion to all the rest. Mix well, weight down with a plate and refrigerate for a few hours or overnight before serving. If you leave it overnight you should be able to serve the salad on a plate after turning the bowl over.
