Mint and pea purée

Mix together a small bag of thawed peas (they come in 500 g
/ 1 lb. bags here), a container of cottage cheese (250 g / 0.5 lb.), a crushed
garlic clove, and fresh chopped mint (a big fistful) with a simple hand blender
until it becomes a purée. Squeeze in some
lemon juice, salt & pepper to taste.
I originally served it as a side with
cold cooked salmon and then on a sandwich with roast beef.
