Roasted beets
Peel the fresh beets and cut them in quarters (or wedges, depending on size). For 500 g / 1 lbs of beets, prepare 1.5 dl / (a little more than 0.5 cup) of veal stock, mix with 2 table spoons of balsamic vinegar and 3 table spoons of brown sugar. Pour over the beets and roast in the oven at 200 C / 400 F for 60-90 minutes, until beets are tender. Served for example with a veal roast.
