Oven-baked eggplant slices

Cut eggplants in centimeter-thick slices. Put on a baking sheet and top with a mixture of  breadcrums, chopped parsley, chopped anchovis and chopped capers. Cook in the oven at 200 C / 400 F for app. 30 minutes. [Recipe courtesy of PVC]
