OK, this is really not a recipe but might fit under "inspiration". At the market today I tasted a new kind of pitted black olives in garlic & parsley, which did indeed turn out to make a great addition to a beef tomato and parsley salad.
Perfect for a Saturday lunch with a few slices of ham.
