Potato cake
If you don't have access to a knife & fork, or if your ability to chew is reduced, this is the perfect dish for you as it is very soft and can be eaten with your hands.
Cook and mash baking potatoes (1 pound/450 gr). Fry 1 chopped onion, add 2 sliced garlic cloves, then chopped tomatoes (10 ounces/300 gr). Season with salt, pepper, a bit of brown sugar and chili peppers and cook until it turns into a thick jam. Beat 4 eggs, mix them with the mashed potatoes, then mix in the tomato sauce and whatever greens you have sitting around (parsley and cooked spinach in this case). Heat butter in a skillet, when hot, pour in the mixture, turn down the heat, and cook for ~10 minutes. Then place under the broiler in the oven until the surface is lightly brown. Turn over and serve at room temperature.
With or without cutlery and dentures.
