Steak
We don't eat much red meat, but on the first cold Sunday of the season, this, with a glass of red, is exactly what's needed.... Heat oven to 400 F / 200 C. On the stove, heat oil in a skillet that can go in the oven, and brown each side of the beef tenderloin (~1 mn/side), then transfer to the oven and cook until the inside temperature is 130 F / 55 C for medium (takes 10-15 minutes depending on the thickness of the cut and the performance of your oven). remove from the oven and let sit in the skillet for another 10 minutes before serving. If you want to meat more well done, cover the skillet during that time so it keeps cooking. Served here with Brusselsprout salad.
