Caramelized carrots



Served here with salmon and thinly sliced zucchini cooked in the oven tossed with olive oil and sliced garlic cloves until slightly browned (thanks S for the inspiration!). Peel or clean carrots, and cut them in large chunks. Put on an oiled baking sheet, season with salt & pepper and roast at 425 F / 220 C until caramelized, app. 25 minutes. Transfer to a bowl and mix in chunked feta cheese and fresh parsley.
