Fish with pine nuts & onion rice
A delicious way to cook rice. Fry 2 sliced onions in oil until translucent, then let them turn brown and caramelize. Let cool and mix in a food processor (or with a hand-held blender). Add 2 cups of water to the onion puree, crumble in a fish bouillon cube and bring to a boil. Add 1 cup of rice (I used brown rice), reduce the heat, and cook until tender. Basically it's like you would normally cook rice but with the onion cream added.
In the meantime, fry fish fillets in oil, 2-3 minutes per side until they start to flake. I used turbot, but any firm fish would do. Squeeze with lemon if you have it handy. Fry 1/2 cup of pine nuts, stirring frequently to avoid burning. Serve the rice topped with fish and nuts.
