Chicken & vegetable stir-fry



Visiting friends in Montreal we were served a delicious stir-fry (the secret I learned is oyster sauce), which I copied with chicken, green beans, spring onion, broccoli and carrots. You can also use mushrooms and cilantro. Cut the ingredients into smaller pieces. Heat sesame oil in a pan, saute garlic and fresh ginger (if you have none, you can dust the chicken in ground ginger powder instead), then the chicken pieces until they are brown on all sides. Add the vegetables, oyster sauce (2-3 table spoons) and some soy sauce. Cook it all until tender and serve on a bed of rice. Or if the rice cooks too slowly, use it next day for fried rice....
