Turkey & spinach meatloaf

Start by cooking garlic cloves in olive oil (the oil should cover the cloves, but don't let them fry, just put them on low heat until starting to brown), drain and set the infused oil aside. Remove thick stems from the spinach (I used 1/2 kg, 1 lb). Saute 1 sliced onion in the infused oil, add spinach and cook until it wilts. Set to cool. Mix 1.5 lb (700 gr) ground turkey with thyme, pepper and hot pepper flakes. Chop the cool spinach mix, and add to the meat mix. Form a loaf and sear its top & bottom of in the infused oil, then cook in the over for almost an hour at 375 F / 190 C until the inside temperature reaches 160 F / 70 C. Let cool a bit before trying to slice.
