Flourless quiche



This is basically the inside of a quiche, just skip the crust. Slice 1.5 pounds (750 gr) of onions and cook them in oil and a dl of water for approximately 15 minutes (until they are translucent and the water is gone). Add lardons (or salt pork) and saute for a few minutes. Mix 2 eggs with 1 dl of heavy cream, add salt, pepper and nutmeg. Pour all the ingredients into a round mold and cook at 200 C / 400F for approximately 15 minutes.
