Fish stew
Stew or soup? Warm and hearty in cold* weather anyway. Peel and dice 1 celeriac, 2-3 potatoes, 2-3 carrots, 1 onion and 2 garlic cloves. Saute in olive oil with 1 dl of arborio rice (the kind you use for risotto) for a couple of minutes, do not let it brown. Add 1/2 dl of white wine and 6 dl of stock. I imagine fish stock would be good but I didn't have any so I used vegetable stock. Simmer for app. 25 minutes, then add 2 dl of heavy cream, salt & pepper. Bring to a boil, then add firm fish (we had app. 600 gr, / 1.3 lb of cod) cut into cubes, and dill, and turn off the heat. Let sit for app. 10 minutes before serving.
