Tzatziki (with benefits)
Grate cucumber(s) over a sieve (see "added benefits" on how to use the juice if you keep it), press out the excess liquid, squeeze in some garlic, mix with Greek yogurt. Let sit for a few hours.
Served here with smoked Maine mackerel.
Added benefit: keep the cucumber juice by placing your sieve over a bowl, pour into a shaker, freeze, then mix with vodka and a splash of vermouth. A creative New Haven restorateur might call it a "cutini"
