Sage and bacon wrapped chicken
Clean carrots and asparagus and cut in 2-3 pieces. Saute in some olive oil and lemon juice with lemon zest and pepper for a few minutes, then transfer to an oven-safe dish. Put fresh sage leaves and more lemon zest on chicken breasts, and wrap in bacon. Here I used very thickly cut bacon, which we then removed before eating the succulently moist chicken. I'll try with thin bacon next, maybe in that case I'd advise eating it. Put the wrapped chicken on top of the vegetables, and cook in the oven 175 C / 350 F for 30-40 minutes until the meat is at temperature.
Served with a sauce made of Greek yogurt with chopped fresh thyme, but really the sauce was not necessary.
