Polenta and spinach


All the ingredients you need for this one are in the first picture: a "tube" of polenta, a bag of spinach, and some parmesan cheese (you can even buy it already grated). Cut the polenta in slices, put it on a greased oven rack covered in tinfoil,  drizzle generously with parmesan. Add little slivers of butter if you want and then put in the oven at 350 F / 200 C until the parmesan turns golden, app. 30 minutes. In the meantime, heat some butter and olive oil in a pan and saute the spinach. Pour some more grated parmesan on top, turn off the heat and cover with a lid while waiting for the polenta to be ready. Easy as pie!
