Duck fried rice
The other night I had friends over for dinner and decided to try a new method for cooking basmati rice. Bad idea, you don't innovate when you have company, unless you think your guests will enjoy raw rice. I ended up saving the dinner by quickly cooking some couscous grains and then had the perfect excuse for making fried rice (it did eventually cook, but the friends were gone by then).
Pick up a roast duck from your local Chinese bird dealer (he's the one with whole birds on display in his shopwindow. If you don't have a Chinatown in proximity, this recipe becomes much more involved and I suggest you think of something else for dinner or resort to delivery).
Separate the duck meat from the skin & fat and saute the latter in a pan with oil and soy sauce. When the fat starts to render, add meat, thinly sliced spring onions, and the cooked rice (brown texmati rice in this case). Stir until very hot, then make space in the middle of the pan and pour in 2 beaten eggs. Let them start to scramble, then mix with the rest. Serve hot and ponder the expression " a blessing in disguise".
