Colorful fish



A colorful plate to cheer you up in wintertime. Cut strips of cod and form circles (if the piece of cod is not long enough you can cheat and use several strips) and fill the interior of the circle with salmon that you will have mixed with chopped onion and a bit of heavy cream in a food processor.
Put in the oven 10-15 minutes at 180 C / 350 F. Prepare a sauce with thinly chopped shallots (for 4 people I use 2 shallots) that you saute in oil, then add fish bouillon (2 dl), white wine (1 dl) and the juice from 2 oranges. Bring to a boil and reduce to half the volume.
Serve with spinach to add more color.
