

A simple one-pot dish: take small potatoes or cut medium ones in half, toss in olive oil and roast in the oven at 450 F / 230 C for about 20 minutes. Shake the pan, roast another 10 minutes, then move to the sides of the pan and put a filet of cod (or other firm white fish) in the middle of the pan and roast for another 10 minutes or so. You can make a sauce of melted butter, lemon zest and chives, or skip the butter to make it lighter and just add some white wine before cooking.

i love love love it. how did you know i spend most of my (limited) free time wondering what to eat for dinner? although i will most likely cook something in (gasp) bare feet than high heels--i don't even own a pair of those, we'll have to give some of these recipes a try!
