Zimtblatter Biscuits
Over the last couple of weeks I have developped an obsession with biscuits, so you can imagine my pleasure when my mother turned up after Christmas with a box full of home made delights!
Here is the recipe that she just sent:
" 250g plain flour
125g ground hazel nuts (I used chopped mixed nuts)
2tsp ground cinnamon
125g sugar
pinch of salt.
Opp. extra, 1 tsp grated zest of lemon
Mix all ingredents to a smooth dough. Rest in fridge for at least 30 mins.
Roll out and cut to shape, or get young staff to do it for you: (or roll into a sausage and slice rounds.)
You can also sprinkle with a mixture of sugar and cinnamon before baking. (80g sugar, 1 tsp. cinn.)
180. degrees C. for about 10 mins.
Now, I never actually ever have the correct ingredients for anything in my cupboards, so I have substituted the hazelnuts for almonds, the cinnamon for all spice and have added a little bit of milk to bind it all together as it was a bit dry.
Along with my new found buiscuit I have decided to collect cookie cutters (Oh! So trying to be like Nigella!).

2 egg yolks (fresh froms my sisters' chickens)
125g butterpinch of salt.
