Smashed celeriac
Celeriac, also known as celery root, is that odd whitish thing you may have seen in the root vegetable aisle and not known what to do with. Turns out it's very tasty, even in this low calorie recipe. Peel, slice and dice the celeriac, fry it in olive oil with fresh thyme (or lemon thyme) and chopped garlic until slightly brown (about 5 mns). Turn down the heat, simmer in 3-4 tablespoons of low-sodium stock for about 25 minutes (until tender). Smash up with a fork or potato masher. The color will be slightly brown (top puree on the plate, to the left are mashed potatoes with dill).
