Salmon and goat cheese


Salmon, goat cheese and salmon roe layered in a glass:
  • Mix soft goat cheese (e.g., "Petit Billy") with a bit of cream and poppy seeds, add thinly chopped spring onions, chopped dill (fresh or dry) and some salt & pepper.
  • Cut smoked salmon into small cubes (start with a thickly cut filet if possible)
  • Put a layer of the cheese mix in the glass, top with salmon cubes, then add another layer of goat mix
  • Decorate with a final layer of salmon roe
  • Serve with a small spoon.
It's quite rich, so no need for a large glass. For 10 small glasses I used 150 g of smoked salmon, 200 g of soft goat cheese, 2 spring onions, and about 1 dl of light cream ("creme fleurette")
