Lapin a la moutarde (rabbit)



Get pieces of rabbit from your butcher or favorite hunter and cover each one with Dijon mustard on all sides and then saute until brown. Add 3 chopped shallots (this recipe is app. for 6 people), a cup of white wine, salt & pepper. Bring to a boil, add a cup of water, then lower the heat and let simmer app. 40 minutes. Add a bit more mustard and creme fraiche or heavy cream at the end to thicken the sauce.
