Braised lentils


All you need are good Puy lentils, and oven safe pan, and a bit of time. Great as a side dish or even on its own.
On the stove, start by sauteeing bacon cut in "matchsticks" (or "cubes de lardons" if you're in France) until brown, then add chopped fresh rosemary, chopped onion (1 red or 2 shallots) and chopped garlic. Add the uncooked lentils, saute another minute, then pour over chicken stock (2 liquid:1 lentil ratio). Put the preparation in the oven at 160 C / 310 F for about an hour. When done, you can toss with a bit of olive oil and vinegar as desired.
