Salmon with feta and sun-dried tomato

In a bowl, mix crumbled feta cheese, sun-dried tomatos (cut in small pieces), red onion (if you have it handy) and some heavy cream* for a smooth consistency. [*creme UHT in French]

Take a salmon filet and cut a couple of pockets that you stuff with the feta/ tomato mixture, then cook in the oven app. 15 minutes at medium temperature (200 celsius / 400 fahrenheit).

Serve with potato puree, or (like on this picture) peas and lentils cooked in wine.
