Marinated salmon (Swedish style)
Marinated salmon Swedish style is your basic marinated salmon, but cut in thicker slices than most store bought version. It's a fool proof recipe:
- get two fillets of salmon (with the skin!) of equal size,
- rub a mixture of coarse salt ("gros sel") and sugar into each filet (fleshy side), there should be enough to coat the filet.
- sprinkle on whole peppercorns, cover with fresh dill, and put the fillets together, fleshy side against fleshy side. Press down.
- wrap in parchment paper and aluminum, then seal in a plastic bag and put in the fridge with some weight on top (wine bottles, milk cartons, whatever you have handy).
- leave in fridge for at least 24 hours, turning over once.
- open the packet, remove peppercorns, dill, and rub off any excess salt/sugar mix with a paper towel.
- cut, and eat with sauce (see recipe under 'fish') and potatoes in any shape or form.
